NEW DELHI — Indian vegetarian cuisine is breaking traditional boundaries this season. Spice & Sprout Cafe, a leading plant-based culinary pioneer, just announced a permanent menu expansion alongside a highly anticipated lineup of limited-time autumn dishes.

The star of the permanent menu expansion is the innovative Chilli-Garlic Cauliflower ‘Wings’. This dish offers a direct answer to the growing demand for vegetarian finger foods. The dish delivers the exact crunch and heat profile of traditional wings, complete with a cooling mint-yogurt dipping sauce.

Sandwich lovers also have a new reason to visit. The cafe introduced the Bombay Grilled Cheese Toastie. This heavy-hitting sandwich features layered beetroots, boiled potatoes, tomatoes, and sharp cheddar. It is slathered in a fiery cilantro-mint chutney and pressed to golden perfection.

Limited-Time Autumn Innovations

Available only through the end of November, the limited-time menu focuses on high-impact fusion street food. Headlining this section is the massive Desi Makhani Nachos.

This dish completely redefines the Tex-Mex staple:

  • Protein: Crumbled tandoori-spiced cottage cheese (paneer).

Another seasonal highlight is the Pulled Jackfruit Slider Duo. Young, green jackfruit is slow-simmered for six hours in a smoky hickory-garam masala barbecue sauce. The texture perfectly mimics shredded meat. It comes served on toasted brioche buns with a crunchy cumin-cabbage slaw.
